Easy Barbecue Chicken Fajitas

Tonight's dinner was shockingly easy - I kind of made it up as I went, but it turned out quite well. It took no more than 25 minutes from start to finish, which was nice. I'm a big fan of fajitas, but I've yet to find a fajita recipe that I felt was authentic and tasty. This one is a twist on a fajita - rather than marinating the chicken, you coat it in barbecue sauce for a unique flavor.

Easy Barbecue Chicken Fajitas

4 boneless, skinless chicken breasts, trimmed
1 cup barbecue sauce
2 yellow onions, sliced
Tortillas
Any fajita accoutrements you would like: guacamole, sour cream, pico de gallo, etc.
2 tablespoon vegetable oil

1. Heat up a 12" inch skillet to medium-high heat. Add vegetable oil and heat until almost smoking.

2. Add chicken and cook for 8-10 minutes on the first side.

3. Flip chicken, add onions on one side of pan and stir onions as needed. Cook for about 10 minutes, or until internal temperature reads 165 degrees. Remove onions and add barbecue sauce, drizzling over chicken and turning chicken to coat well. Turn the heat down to medium-low and let chicken soak up barbecue sauce for 2 minutes.

4. Remove chicken from skillet and slice into thin strips. Serve immediately.

oh that sounds yummy!! I wonder if I could cook the chicken on my George Foreman Grill instead? mmmmmm BBQ sauce... now I'm hungry
