MSC: Coconut Cupcakes...or...Yellow Buttermilk Cupcakes with Dark Chocolate Frosting

Yikes. I so don't eat coconut. No offense intended, Jennifer from Cinema Cupcakes, our recipe selector for the month! The look of it totally creeps me out, and I'm not a fan of the taste either. When I first saw this on the list for this month, I thought, well, there's one cupcake I'm skipping. I hope I don't get kicked out! Then, I re-thought the situation, and realized that maybe I could make some creative substitutions and still participate. Perhaps I could make something really awesome by being creative.

Apparently I forgot that I'm me and my creativity in the kitchen tends to lead to disasters of epic proportions. Like when my friend Erin and I were 10 and decided that chocolate water was an awesome idea. Hershey's natural cocoa powder plus water, it had to be awesome...or not. So after coming up with a grand plan to make a white cake cupcake and decorate it with shavings of white chocolate that looked like coconut, I realized that there was absolutely no way I had time for something so labor intensive this month...so I made Martha's Yellow Buttermilk Cupcakes with Dark Chocolate Frosting instead. Yum! I had an ulterior motive for making these - I plan to bake some yellow cupcakes for Baby's 2nd birthday next month, and I'm searching for the perfect recipe. This wasn't it.

Don't get me wrong, they were yummy, but I didn't love the consistency of the frosting, nor did I really love the cupcake itself. The cupcake was a little bland, actually. I was quite disappointed. I have a feeling I'll be sticking with the America's Test Kitchen baking book recipe that I've had before, though I haven't posted it in the past. It's definitely much more flavorful and moist than this cupcake. Sorry Martha, this was one wasn't a hit for me! But it was pretty...

I'm glad someone else is in with me on the dislike of coconut. I bet your cupcakes were great, can't go wrong with such a classic combination!

I used to hate coconut and somehow looove it now! But way to go on still baking! Not to mention I'm glad I know now that her classic combo isn't all that great...

Yeah - I don't like that frosting recipe either - I thought I had just made a mistake somewhere!

I loved the coconut cupcakes though - you missed out!!

And finally, they were a cupcake that tasty like one - not a muffin

I do not like coconut at all! I am with you on this one sister. The cupcakes look yummy, but I am so sorry they did not turn out the way you thought they would.

Just stopping by from SITS to say hello. Hope you have a great weekend!

I actually really like me some coconut, but have never tried it in a cupcake. Happy SITS Saturday Sharefest!

I begged out of the one in November with the sweet potatoes and marshmallows, so don't care for that combination, so I think you are good to go subbing on this one. Not me...I LOVE coconut and this was hands down my favorite EVER! Fun to hear what happens in others' kitchens over the week, learn a lot from what works and what doesn't! Thanks for sharing.

I'm not a fan of coconut either! It is so hard to find that one vanilla cupcake recipe that is moist and fluffy.

I'm not a huge fan of coconut either, and I too have made the water + chocolate = disaster! I'm much more excited about Smores cupcakes!

I'm glad you still participated this month even if you aren't a coconut fan :) These cupcakes look marvelous! Glad to hear your report on these, but bummer they weren't a big hit!

No offense taken! I knew going into this month's challenge that quite a few folks wouldn't enjoy it as much as I did.

I'm glad you baked this recipe, though. I was wondering how it was! :) See you next month!
